This is a generations old DELICIOUS banana cake that had me coming back for more...and more. My sweet sister-in-law's (thank you for sharing with us Emma) Nana Betsy first made this cake and her whole family fell in love with it. It's a long standing July 4th and Memorial Day tradition that is now trickling in to my family too. We LOVE food traditions and we LOVE Nana Betsy's Banana Cake. It's light and sweet and basically as good as it gets. Adding this one to my list!
So without further ado...here it is!

Betsy's Banana Cake
2/3 cup butter
2 1/2 cup flour
1 2/3 cup sugar
1 1/4 tsp baking powder
1 tsp baking soda
1 tsp salt
1 1/4 cup ripe bananas, mashed
2/3 cup buttermilk
2 large eggs
2/3 cup chopped nuts (optional)
Frosting:
1/4 cup butter
8 oz package cream cheese
1-2 cups powdered sugar
1/2 tsp vanilla
Instructions:
Preheat oven to 350 degrees F.
Sift dry ingredients (flour, sugar, baking powder, baking soda, and salt) + set aside.
Cream butter + sugar.
Add sifted dry ingredients to butter + sugar mixture. Add mashed bananas and buttermilk. Beat for 2 minutes and then add the eggs. Beat 2 more minutes. Stir in nuts. Pour batter into a greased 9x13 pan and bake for 45-50 minutes (or until toothpick comes out clean) in a 350 degree oven.
Let cake cool + then frost. Add blueberries and sliced strawberries to make American Flag.
Frosting:
1/4 cup butter
8 oz package cream cheese
1-2 cups powdered sugar
1/2 tsp vanilla
Combine ingredients in a medium sized bowl and mix until smooth.
